Keto Baked Zucchini Chips

4 zucchini (sliced into ½-inch rounds)
3 tablespoons olive oil
1 pinch salt
1 pinch fresh ground pepper
1½ cups pork rinds (chopped)
½ cup Parmesan cheese (grated)
1 teaspoon dried oregano
1 teaspoon garlic powder
1 cup full-fat plain yogurt (for serving)

Preheat oven to 450 degrees F / 232 degrees C.

Line a baking sheet with parchment and set aside.

In a large mixing bowl, combine 4 zucchini, 3 tablespoons olive oil, 1 pinch salt, and 1 pinch fresh ground pepper. Mix until well combined.

In a separate bowl, combine 1½ cups pork rinds, ½ cup Parmesan cheese, 1 teaspoon dried oregano, and 1 teaspoon garlic powder.

Setting aside a third of the Parmesan mixture, pour the rest over zucchini slices. Toss to fully coat them.

Place the zucchini slices in a single layer on the baking sheet.

Top with the remaining Parmesan mixture.

Bake for 10 minutes. Rotate pan and continue to bake for 8 to 10 minutes more, or until chips are golden brown.

Remove from oven.

Serve with 1 cup full-fat plain yogurt (optional).
