Cut the chicken, removing the head but leaving the neck bone.

Prepare a seasoning blend by blending garlic, ginger, celery, and basil with a little water.

Add 1/3 of the chopped onions to the chicken along with 1 teaspoon of salt, 2 maggi seasoning cubes, 1/4 teaspoon of white pepper, and half of the green seasoning. Stir to combine.

Add enough water to the pot so that it is about the same level as the chicken, then cover and cook on high heat until the chicken is completely done.

Blend the remaining tomatoes with another 1/3 of the chopped onions.

Heat 1 cup of vegetable oil in a pot and add the remaining chopped onions. Sauté until translucent.

Add the blended tomatoes to the pot and cook until they shrink and start sticking to the pot, about 10 to 20 minutes, stirring occasionally to prevent burning.

Preheat the oven to broil and place the cooked chicken on a baking sheet lined with aluminum foil to gain color.

Broil the chicken for about 8 minutes on one side, then flip and broil for another 5-6 minutes until both sides are browned.

Add the tomato paste to the pot and stir in the reserved green seasoning, allowing the spices to bloom in the oil.
