Sauté the chopped onion in olive oil until it starts to brown.

Add the chopped tomatoes and season with salt, pepper, cumin, coriander, paprika, and tomato puree.

Add the chopped chilies and let the tomatoes cook until dissolved.

Crack 3 eggs on top of the mixture and add a splash of water; mix thoroughly on low heat.

Spread some liquid cheese on top while it's cooking; cream cheese can be used as an alternative.

Cover the pan and let it cook for a couple of minutes.

Garnish with fresh herbs and serve with bread and a cup of tea.
