Caramelized Onions

Cultural Context

Caramelized onions have their roots in French cuisine, where they are often used to enhance the flavor of dishes like French onion soup. This technique transforms the sharpness of raw onions into a sweet, rich flavor through slow cooking. Today, caramelized onions are a beloved addition to burgers, pizzas, and various savory dishes, showcasing their versatility in modern cooking.

1

Cut off the tops and bottoms of the onions and slice them lengthwise.

2

Remove the tough outer layers of onion skins and trim any remaining root ends with a v-cut.

3

Slice the onions into about a quarter of an inch thick slices, cutting with the grain.

4

Heat 8 tablespoons of butter in a large stockpot over medium heat until melted.

5

Add enough sliced onions to fill the pot about 2/3rds of the way and sprinkle with 1 tablespoon of kosher salt, stirring to combine.

6

Continue adding onions as they cook down and release their liquid until all onions are added.

7

Keep the heat on medium until the onions have released all their liquid, stirring every 10 minutes, which takes about 60-90 minutes.

8

Once the onions have released their liquid, turn the heat down to low, stirring every five minutes.

9

Cook the onions for a total of 4 to 5 hours, scraping up any brown bits from the bottom of the pot to prevent burning, especially toward the end.

10

When the onions reach a color similar to a tootsie roll, they are done.
