Cut the onions in half and then into strips.
Add the sliced onions to a pan with olive oil, butter, salt, and pepper; mix until coated.
Continue mixing the onions while preparing other ingredients.
Prepare Stove Top stuffing in the microwave by adding hot water and butter to the stuffing mix, covering with plastic wrap, and microwaving for about 5-6 minutes.
Stir the onions and season the pork chops with salt and pepper on both sides.
Poke each pork chop with a fork and set aside.
Peel, core, and slice the apples to about a quarter inch in thickness.
Once the onions have browned after 10-15 minutes, add the sliced apples and cook for another 10 minutes.
Remove the plastic wrap from the stuffing and mix it with a fork until well combined.
Divide the stuffing into four portions and press each portion into a patty that fits the shape of the pork chop, then place it on top of each chop and press gently.
Preheat the oven to 400°F (204°C).
Cook the pork chops in the preheated oven for about 12-13 minutes.
Stir the onions and apples until they are golden brown, then optionally add 1 tablespoon of sugar and mix, cooking for an additional 5 minutes.
Remove the pork chops from the oven and serve with the caramelized onions and apples on top, garnished with fresh chopped parsley.
