Season the pork chops with a generous amount of salt and black pepper.
Slice 1 white onion and 8 ounces of mushrooms (white or cremini).
Heat a heavy cast iron skillet over medium-high heat.
Sear the pork chops in the skillet for about 3 to 4 minutes per side until browned.
Transfer the seared pork chops to a baking pan to finish cooking in the oven.
If the pork chops are thin, set them aside and cook them all in the skillet instead of using the oven.
Add a little olive oil to the pan, then add the sliced mushrooms and onion, sautéing for about 5 to 7 minutes until tender.
Add 2 tablespoons of butter to the pan and let it melt, then add 2 cloves of minced garlic and sauté for about 60 seconds.
Sprinkle in 2 tablespoons of all purpose flour and mix until there are no more white specks.
Pour in 2 cups of chicken broth, stir, and bring to a simmer to thicken into a gravy.
If using the oven, grab the chops out and slide them back into the pan with the gravy, smothering them with the onion and mushroom mixture.
If using the skillet for thin chops, return them to the pan and let them simmer until they reach an internal temperature of 145 degrees.
