Season the pork chops with Island Vibe Cajun seasoning and a little salt.
Cut slits in the fat of the pork chops to prevent curling during cooking.
Let the seasoned pork chops sit for 5 to 10 minutes to absorb the seasoning.
Dredge the pork chops in all-purpose flour, coating them evenly.
Heat a cast iron skillet over medium-high heat and add a little oil for searing.
Sear the pork chops for 2 to 3 minutes until golden brown, then flip them over and cook for another 1 to 2 minutes.
Remove the pork chops from the skillet once both sides are golden brown.
Add 2 tablespoons of unsalted butter to the skillet and allow it to melt.
Add sliced onions to the skillet and cook them slowly to caramelize, keeping the heat low to avoid burning.
Add 2 cloves of minced garlic to the onions and cook until fragrant, being careful not to burn the garlic.
Stir in 2 tablespoons of all-purpose flour to the onion and garlic mixture and fry it to eliminate the raw flour taste.
Pour in soy sauce and chicken broth gradually, stirring to form a gravy with the desired consistency.
Add heavy whipping cream to the gravy and stir well.
Sprinkle in a little more Cajun seasoning to taste.
Return the pork chops to the skillet, allowing them to simmer in the gravy.
Cover the skillet and let the pork chops simmer until they are juicy and tender, checking the gravy consistency as needed.
Garnish the dish with fresh parsley before serving.
