Wash the potatoes and place them in a pan of cold water.
Turn the skillet on to medium-high heat and let it heat up.
Pat the pork chops dry and season one side with salt and pepper.
Place the pork chops in the skillet seasoned side down and season the other side.
While the pork chops are frying, remove the leaves from fresh thyme and slice half an onion.
Flip the pork chops to get color on both sides and then remove them from the pan.
Add fresh thyme and sliced onions to the skillet.
Add flour to the skillet and mix it in.
Add bacon grease to the skillet for more flavor.
Turn on the potatoes to cook them at the same time as the pork chops.
Gradually add chicken broth to the skillet, stirring to avoid lumps.
Return the pork chops to the skillet and cover with a lid to finish cooking.
Cook the pork chops for about 20-25 minutes.
Drain the potatoes and return them to the hot pan.
In a measuring cup, combine 1/4 cup of milk and 2 teaspoons of sour cream.
Add chives to the milk and sour cream mixture and mix well.
Add 2 tablespoons of butter to the potatoes, then add the milk and sour cream mixture.
Mash the potatoes, leaving them a bit lumpy.
Taste the gravy and add salt, pepper, and about a teaspoon of garlic if needed.
