Chop the onion.
Mince the garlic.
Drizzle oil over the pork chops to coat them before seasoning.
Season the pork chops with Adobo seasoning, garlic powder, onion powder, and black pepper, patting the seasoning into the meat.
Set the seasoned pork chops aside.
Heat oil in a large skillet over medium-high heat.
Sear the pork chops for about 2 minutes on each side, then remove them from the skillet and place them in the crock pot.
Continue searing the remaining pork chops in the same manner.
Add the chopped onion to the same skillet and sauté for about 4 to 5 minutes until softened.
Add the minced garlic and sauté for another minute.
Add flour to the skillet and cook for about 1 to 2 minutes.
Add tomato paste and spread it around in the skillet for about a minute.
Pour in chicken broth and cooking wine, stirring to combine.
Season the mixture with black pepper and Adobo seasoning, then turn off the heat.
Add mushrooms to the crock pot, breaking up any large pieces with your hands.
Pour the sauce from the skillet over the pork chops and mushrooms in the crock pot.
Cover the crock pot and set it to high for 4 hours.
After 4 hours, add heavy whipping cream to the crock pot.
Mix corn starch with some chicken broth to create a slurry, then pour it into the crock pot.
Allow the mixture to cook for another 30 minutes on high heat.
Taste the dish to check for seasoning and adjust if necessary.
