Slice the onions in half, then slice horizontally to prepare for caramelizing.
Use a garlic press to mince the garlic.
Prep a baking tray lined with parchment paper and add washed broccolini.
Drizzle olive oil over the broccolini and sprinkle with salt and pepper to taste.
Roast the broccolini in the oven for about 15 minutes or until slightly tender and charred on the edges.
In a high-powered blender, combine unsweetened dairy free milk, raw cashews, one chipotle pepper, nutritional yeast, white miso paste, dijon mustard, and lemon juice to create the cashew cream sauce.
Blend the mixture for about 1.5 to 2 minutes until creamy and slightly liquidy, adding more milk if necessary.
In a wide pan, add olive oil over medium low heat and toss in the sliced onions, mixing to coat them with oil.
Sprinkle a pinch of salt over the onions and set a timer for 2-3 minutes, stirring with a wooden spatula to help pull out moisture and sugar from the onions.
Continue to caramelize the onions for about 20 minutes, stirring occasionally, until they look jammy.
At the 20 minute mark, add a splash of balsamic vinegar to deglaze the pan and enhance the flavor, followed by a splash of water or vegetable stock if needed.
Add minced garlic and spices (garlic powder, black pepper, chili powder, smoked paprika, turmeric, cumin, and dried oregano) to the onions and cook until fragrant.
Stir in the canned cannellini beans, ensuring they soak up the flavors.
Add the cheesy cashew sauce to the skillet and heat through without boiling, stirring until creamy and melty.
Serve with rice, crusty bread, or on its own, and finish with textures like pickled onions, fresh herbs, or toasted breadcrumbs.
