Saute onions, sweet pepper, and corn kernels together in oil for 2-3 minutes.

Add chopped potatoes and season with salt and white pepper; sauté for another 5 minutes.

Add vegetable broth and bring to a boil.

Stir in corn puree and milk (or half and half or heavy cream) and allow to simmer for 15-20 minutes.

If chowder is not thick enough, make a roux with equal parts fat and flour to thicken it.

Adjust seasoning to taste, adding more black pepper if desired.

Taste the chowder to check for flavor and thickness.
