Add 1 tablespoon of coconut oil into a pan over high heat.

Add sliced onions, chopped garlic, curry leaves, chilies, grated ginger, and mustard seeds. Toss till fragrant until the onions begin to brown.

Add curry powder, chili powder, turmeric, salt, and optional dried fish pieces. Stir to evenly distribute the spices.

Pour about 1 cup of water, cover, and cook till the eggplant becomes tender (about 10 minutes).
