- 4Sauté vegetables in the same skillet until softened, about 5-7 minutes.
- 5Combine cooked pasta, meat, vegetables, and sauce in a large mixing bowl.
- 6Mix in half of the cheese until well combined.
- 7Transfer the mixture to a greased baking dish.
- 8Top with remaining cheese and breadcrumbs for a crispy topping.
- 9Cover with foil and bake for 20 minutes.
- 10Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.

Instructions

- 2In a large bowl, combine the shredded chicken, 1/2 cup of red chile sauce, garlic powder, cumin, salt, and black pepper. Mix well.
- 3In a skillet, heat the vegetable oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until soft. Drain on paper towels.
- 4Spread a thin layer of red chile sauce on the bottom of a baking dish.
- 5Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
- 6Once all enchiladas are in the dish, pour the remaining red chile sauce over the top.
- 7Sprinkle the shredded cheese and diced onion evenly over the enchiladas.
- 8Cover the dish with aluminum foil and bake for 20 minutes.
- 9Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- 10Garnish with chopped cilantro before serving.
