Preheat the oven to 200° C (400° F) or 220° C if using without a fan.
Drain the canned chickpeas and rinse them thoroughly under cold water.
Place the rinsed chickpeas onto a clean tea towel or kitchen paper and dry them as much as possible, rubbing vigorously to break the skins.
Spread the dried chickpeas onto an oven tray lined with parchment paper, ensuring they are not overcrowded.
Place the chickpeas in the preheated oven for 25 to 30 minutes without any seasoning.
Halfway through baking, take them out and shake the tray to ensure all sides are drying out and crisping up.
After 30 minutes, check that the chickpeas are dried out and have crispy bits.
Drizzle 30 ml of olive oil over the chickpeas in a mixing bowl and mix to coat them completely.
For the first seasoning, mix 1 teaspoon of smoked paprika, 1/2 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of black pepper, and 1/4 teaspoon of salt in a bowl.
For the second seasoning, mix 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and 1/4 teaspoon of sea salt in another bowl.
Separate the chickpeas into two mixing bowls and sprinkle the spice blends on each, mixing until thoroughly coated.
Place the seasoned chickpeas back onto the oven tray and return them to the oven for an additional 10 minutes to crisp up completely.
After 10 minutes, take them from the oven and let them sit for 10 minutes to cool before serving.
