Grate dry coconut to make fresh homemade coconut milk.

In a bowl, combine 1 and 1/4 cups brown sugar and 1 and 1/2 cups fine grain cornmeal, mixing until well combined.

Add 1 and 1/2 teaspoons freshly grated nutmeg, 1 teaspoon cardamom powder, and 1 teaspoon freshly grated ginger to the mixture and mix well.

Stir in 4 tablespoons freshly grated coconut and the remaining 1/2 teaspoon of nutmeg, mixing until everything is combined.

Prepare about 4 cups of rich and creamy coconut milk.

Add 2 cups of coconut milk to the dry ingredients and mix until well combined.

Incorporate 1 tablespoon of vanilla extract into the mixture.

Grease a bowl with butter and pour the mixture into it.

Preheat the oven to 350°F and place another pan with water at the bottom.
