Welcome to Wishing Well barbecue, I'm Dustin Wells.
Start with three inch and a half center cut pork chops, trim any extra fat if necessary.
Use yellow mustard as a binder on all sides of the pork chops.
Season the pork chops with Wishing Well barbecue competition style rub, covering completely.
Let the pork chops rest on the cutting board while firing up the grill.
Turn on all burners of the charbroil infrared gas grill on high until it reaches 450 degrees.
Spray the grill grates with vegetable oil spray to prevent sticking.
Place the first pork chop on the grill at the 10 o'clock position and close the grill lid.
Set a timer for 1 minute and 30 seconds.
After the timer goes off, rotate the pork chops to the 2 o'clock position and close the lid again, setting another timer for 1 minute and 30 seconds.
Check for grill marks after the second timer goes off, then flip the pork chops over to the other side.
Close the grill lid and set a timer for 1 minute and 30 seconds.
After that timer, rotate the pork chops to the 2 o'clock position again, closing the lid for another minute and a half.
Move the pork chops to the top rack of the grill and turn off the burners directly underneath them.
Monitor the internal temperature with a thermometer until it reaches 145 degrees, which takes about 10 minutes.
Once the pork chops reach 145 degrees, remove them from the grill and let them rest.
