Start by making the sweet and sour sauce. Combine brown sugar, fresh pineapple, and about 1 cup of pineapple juice in a saucepan.
Add rice vinegar and soy sauce to the saucepan.
Bring the mixture to a slow boil and let it simmer for about 15 minutes.
Prepare the pork chops by making a rub with kosher salt, coriander, ancho chili powder, smoked paprika, and cumin.
Brush the pork chops lightly with canola oil to help the rub stick and prevent sticking to the grill.
Generously dust the rub on both sides of the pork chops, using about 1/2 teaspoon per chop.
Preheat the grill to medium to medium-high heat and rub it down with a towel for extra insurance.
Place the pork chops on the grill and cook for about 2-3 minutes to get grill marks, then give them a three-quarter turn for more grill marks.
After about 8 minutes total, check the pork chops for doneness, ensuring not to overcook them as they will continue to cook off the grill.
Plate the pork chops and drizzle the thickened sweet and sour sauce over the top.
Finish with coarsely chopped cilantro on top.
