Lao-Thai Coconut Pandan Jello

Prepare a mold by lightly greasing it with oil.
Combine coconut milk, sugar, and salt in a saucepan over medium heat until sugar dissolves.
Add agar-agar to the coconut mixture and stir until fully dissolved, about 5 minutes.
Remove from heat and let cool slightly.
In a separate bowl, mix pandan juice with water and sugar until dissolved.
Layer the coconut mixture into the mold and refrigerate until set, about 30 minutes.
Once the first layer is set, pour the pandan mixture over it.
Repeat layering until all mixtures are used, allowing each layer to set before adding the next.
Chill the completed jello for at least 2 hours before serving.
To serve, carefully unmold the jello and cut into squares.
