Prepare 2 pounds of brown sugar mixed with a little white sugar in a bowl.
Measure out 2 pounds of mellow cream butter and add it to the sugar.
Beat the butter and sugar until fluffy, using a KitchenAid or hand mixer.
Sift 2 pounds of flour into a separate bowl and add 1 teaspoon each of allspice, cinnamon, nutmeg, and 1 teaspoon of salt.
Add 1.5 tablespoons of baking powder to the flour mixture and mix well.
Add raisins to the flour mixture and set aside.
Crack 15 eggs into a bowl, add 1 tablespoon of vanilla extract, and 1 teaspoon of almond extract, then beat the eggs.
Add 2 lemon peels to the eggs to cut the rawness of the egg flavor.
Combine the beaten eggs into the butter and sugar mixture gradually.
Fold in the flour mixture and raisins into the wet ingredients.
Mix in 1/2 cup of evaporated milk and 1/2 cup of water to the batter.
Grease the cake pans with butter and dust with flour to prevent sticking.
Pour the batter into the prepared pans.
