Preheat the Blackstone griddle on low.
Fillet the chicken breasts into cutlets using a sharp knife.
Prepare a dredging station with all-purpose flour in one dish, whisked eggs in another, and breadcrumbs in a third dish.
Add Italian dressing seasoning to the flour, egg mixture, and breadcrumbs for seasoning.
Add grated parmesan cheese to the breadcrumbs for extra flavor.
Check the griddle temperature, aiming for around 300°F.
Bread the chicken cutlets by first coating them in flour, then dipping them in the egg mixture, and finally coating them in breadcrumbs.
Drizzle oil onto the griddle and place the breaded chicken cutlets on it.
Cook the chicken cutlets for 2-3 minutes on one side before flipping them over.
Add more oil to the griddle after flipping the cutlets.
Lower the heat to low and continue cooking until the internal temperature reaches 160-165°F.
