Chili

Cultural Context

Chili is a staple dish in American cuisine, particularly associated with Tex-Mex and Southwestern cooking. It has roots in the early 20th century and is often served at gatherings, competitions, and as comfort food. Variations abound, with some regions favoring beans while others do not, leading to spirited debates about the 'true' chili recipe.

1

Preheat the broiler to high and place the rack about 8 inches from the heat source.

2

Spread 1.2 kg of ground beef onto a sheet tray and flatten it into a sheet.

3

Broil the beef for 8 to 10 minutes until browned on top and cooked through.

4

While the beef is broiling, dice 1 large white onion and smash 5-6 cloves of garlic using a garlic press.

5

In a separate bowl, combine 1 can of tomato sauce, 2 drained cans of diced tomatoes, 1 can of fire roasted tomatoes, and puree with an immersion blender.

6

Add 2 smoked Chipotle peppers in Adobo sauce to the tomato mixture and blend until combined.

7

Once the beef is done, let it cool and crumble it into small pieces.

8

In a large heavy-bottom pot over medium heat, add a squiggle of olive oil, the diced onion, smashed garlic, and a pinch of salt, stirring to combine.

9

Sweat the onion for about 5 to 6 minutes until softened and fragrant.

10

Add 60 g chili powder, 30 g paprika, 10 g ground cumin, and a few pinches of chili flakes to the softened onion and garlic, stirring for 20 to 30 seconds to toast the spices.

11

Stir in the blended tomato mixture, 50 g tomato paste, and mix well, scraping the bottom of the pot to prevent burning.

12

Add 20 g hot sauce, 30 g brown sugar, 30 g Worcestershire sauce, 15 g cider vinegar, 30 g beef bouillon paste, and 10 g salt to the pot, stirring to combine.

13

Bring the chili to a low simmer to unify the flavors and hydrate the chili powder.

14

Crumble the broiled beef into small pieces and mix it into the chili pot, ensuring to scrape all the juices from the sheet tray into the pot.

15

Add 4 cans of kidney beans to the chili and stir to combine.
