2 pounds of ground beef
2 9oz packs of chorizo beef sausage
1 medium onion diced
1 bell pepper diced
1/2 poblano pepper diced
4 minced garlic cloves
1 15oz can of tomato sauce
3 tbs of tomato paste
1 can of rotel chili fixings
1 can of fire roasted tomatoes
2 cans of pinto beans drained and rinsed
2 cans of kidney beans drained and rinsed
1 1/2 cups beef broth
2 bay leaves
1 tsp sugar
1 tsp cumin
2 tbs Chili powder
Salt and pepper to taste

Cook ground beef and chorizo until no longer pink, drain and set aside.

Add in onions, bell pepper, and poblano pepper; sauté for 5 minutes.

Add garlic and cook for 2 minutes.

Next, add 3 tbs of tomato paste and cook an additional 2 minutes.

Add back in the beef and chorizo.

Next, add the tomato sauce, Rotel, fire roasted tomatoes, 2 bay leaves, all the beans, 1 1/2 cups beef broth, cumin, chili powder, salt, pepper, and 1 tsp sugar; mix well.

Turn on low and simmer for 2 hours, stirring occasionally. Taste and adjust seasoning to your liking.
