French Canadian Pea Soup with Ham and Smoked Sausage

Cultural Context

Originating from the French Canadian tradition, pea soup is a staple in Quebec, often made during long winters to provide warmth and nourishment. This hearty dish reflects the resourcefulness of early settlers, who used dried peas and preserved meats to create a filling meal. Today, it remains a beloved comfort food, often enjoyed at family gatherings and festivals, with variations found across Canada and beyond.
