2 cups fresh coconut milk
1 cup light brown sugar
1 can sweetened condensed milk
1/4 tsp nutmeg
1/4 cinnamon
1 tsp ginger
1 tbsp butter
1 tsp vanilla essence

Combine coconut milk, sugar, and salt in a saucepan over medium heat.

Stir the mixture until the sugar dissolves completely, about 3-5 minutes.

Add the coconut meat and continue to cook for another 5 minutes, stirring occasionally.

In a separate bowl, dissolve gelatin in warm water according to package instructions.

Remove the saucepan from heat and stir in lime juice and vanilla extract.

Add the dissolved gelatin to the coconut mixture and mix well.

Pour the mixture into a mold or dish and smooth the top.
