1

Add 2 cups of coconut milk, 1/2 teaspoon of ground cinnamon, and grated nutmeg to a blender and pulse the mixture.

2

Heat a non-stick pot on medium to high heat.

3

Add the coconut milk to the pot followed by 1 cup of brown sugar and stir to melt the sugar.

4

Add 1 tin of condensed milk and keep stirring for about 25 minutes while the milk comes to a boil.

5

Continue stirring as the mixture thickens and comes away from the pot, reducing in consistency.

6

Turn off the stove and add 1 tablespoon of butter and 1/2 teaspoon of almond essence, mixing for a few minutes longer.

7

Observe the fudge as it goes from shiny to a matte finish as it firms up.

8

Pour the mixture into a lightly greased dish and allow it to sit for a few minutes before marking blocks of squares with a knife.

9

Allow the coconut fudge/coconut cheese to cool for a couple of hours.
