Melt 1/4 cup of butter in a large pot.

Add 1/4 cup of flour and stir until it becomes a blonde roux.

Add 6 cups of chicken broth to the pot.

Add roughly shredded chicken to the pot.

Stir in 1/4 teaspoon of seasoning salt, 1 teaspoon of black pepper, and 2 teaspoons of poultry seasoning.

Stir the mixture and let it come to a boil.

Once boiling, reduce heat to low and let it simmer for approximately 30 minutes, stirring occasionally.

After 30 minutes, add 2 cups of mixed vegetables and stir them in.

Let the soup finish cooking for about 30 more minutes.

Remove the soup from the heat.
