Bourbon Chicken

1 lb chicken thighs
2 cloves garlic
1 tsp ginger
2 tbsp vegetable oil
1/4 cup water
1/4 cup soy sauce
1/4 cup apple juice
1/4 cup brown sugar
1/4 tsp crushed red pepper flakes
2 tbsp ketchup
1 tbsp apple cider vinegar
1/2 cup bourbon
for serving: rice or noodles

Dice chicken thighs or chicken breast.

Chop garlic and ginger.

Heat vegetable oil in a pan over medium high heat.

Add diced chicken, garlic, and ginger to the pan and stir until the chicken is about done.

In a large bowl, combine water, vegetable oil, soy sauce, apple juice, brown sugar, crushed red pepper flakes, chopped garlic, chopped ginger, ketchup, and apple cider vinegar.

Whisk the sauce ingredients together and set aside.

Remove the chicken from the pan and place it on a plate.

Pour the sauce into the pan and stir, letting it cook for about 7 or 8 minutes.

Add bourbon to the sauce.

Return the chicken to the pan, stir to coat, and let the sauce reduce until it thickens enough to coat the chicken.
