Slice chicken breast into thin pieces and coat with 1 tablespoon of cornstarch. Let sit for 15-20 minutes.

Prepare the sauce by mixing soy sauce, apple juice, apple cider vinegar, brown sugar, garlic, ginger, chicken stock, ketchup, and Sriracha.

Preheat the griddle until hot, indicated by wisps of smoke.

Add the chicken to the griddle and cook until it starts to brown, aiming for color on the chicken.

Add chopped green onions to the griddle to char them slightly.
