Bourbon Chicken

1 lb boneless chicken thighs
1 cup chicken broth
2 cloves garlic, minced
1 tsp ginger, minced
2 green onions, chopped (for garnish)
1/2 cup bourbon
1/4 cup apple juice
2 tbsp rice vinegar
1/4 cup soy sauce
1/4 cup brown sugar
1 tbsp corn starch
1 tbsp mushroom seasoning
1/2 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 cube chicken bouillon
1 tsp seasoned salt
2 tbsp vegetable oil
1 tbsp sesame oil
1 tbsp sesame seeds
2 cups jasmine rice
2 cups stir fried vegetables

Wash the boneless chicken thighs and set aside.

In a bowl, season the chicken with garlic powder, onion powder, chili powder, chicken bouillon, and seasoned salt. Marinate for about 1-2 hours.

Preheat a skillet and add oil.

Sear the marinated chicken thighs in the skillet for about 4-5 minutes on both sides until cooked through. Remove and set aside.

Add more oil and sesame oil to the skillet.

Add chopped garlic, ginger, and onions to the skillet and sauté for 2-3 minutes until fragrant.

Pour in the bourbon and cook for about 1 minute to cook off the harsh alcohol taste.

Add chicken broth, soy sauce, rice vinegar, brown sugar, and mushroom seasoning to the skillet. Allow to come to a simmer.

Once simmering, add corn starch to thicken the sauce.

Return the cooked chicken to the skillet and toss in the sauce. If chicken is not fully cooked, allow to simmer for an additional 5 minutes.

Garnish with sesame seeds and serve with jasmine rice and stir fried vegetables.
