Bourbon Chicken

1.5 pounds boneless, skinless chicken thighs
1/4 teaspoon garlic paste
1/4 teaspoon ginger paste
1/4 teaspoon white pepper
1 teaspoon hoisin sauce
1/3 cup light brown sugar
1/4 cup less sodium soy sauce
1/2 tablespoon hoisin sauce
1/2 tablespoon oyster sauce
1 teaspoon shaoling cooking wine
1/8 teaspoon pure sesame oil
1/2 teaspoon ginger paste
1/2 teaspoon minced garlic
1/2 teaspoon optional MSG
2 tablespoons bourbon
1 teaspoon cornstarch
splash of water
neutral oil (avocado oil)
green onion (for garnish)

Marinate chicken thighs with garlic paste, ginger paste, white pepper, and hoisin sauce for 15 minutes.

Heat avocado oil in a wok until it starts to smoke.

Cook chicken thighs for 2-3 minutes per side until fully cooked and browned.

In a bowl, whisk together light brown sugar, less sodium soy sauce, hoisin sauce, oyster sauce, shaoling cooking wine, sesame oil, ginger paste, minced garlic, and optional MSG.

Remove cooked chicken from the wok and chop it into bite-sized pieces.

Add sauce to the wok and bring to a simmer.

Mix cornstarch with a splash of water to create a slurry and add to the sauce to thicken.

Add bourbon to the sauce and let it cook for another minute.

Return chopped chicken to the wok and toss to coat in the sauce for 1-2 minutes.

Garnish with green onion and serve over rice or in lettuce wraps.
