Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 2 tbsp vegetable oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. 1In a bowl, mix together the bourbon, soy sauce, brown sugar, apple juice, garlic, ginger, black pepper, and red pepper flakes to create the marinade.
  2. 2Cut the chicken thighs into bite-sized pieces and place them in a resealable plastic bag or a bowl.
  3. 3Pour the marinade over the chicken, seal the bag or cover the bowl, and refrigerate for at least 1 hour, preferably overnight.
  4. 4Heat the vegetable oil in a large skillet over medium-high heat.
  5. 5Remove the chicken from the marinade, reserving the marinade for later use.
  6. 6Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  7. 7Once the chicken is cooked, pour the reserved marinade into the skillet.
  8. 8Bring the marinade to a boil, then reduce the heat and let it simmer for about 5 minutes, allowing it to thicken slightly.
  9. 9Serve the bourbon chicken over rice or noodles, garnished with chopped green onions.
