Scalloped Potatoes and Ham

4 cups Yukon Gold potatoes
2 cups ham
1/4 cup butter
1/2 cup onions
1/4 cup flour
2 cups milk
1 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg
1 cup cheddar cheese

Thinly slice Yukon Gold potatoes.

Layer half of the potatoes overlapping in a baking dish.

Sprinkle half of the ham on top of the potatoes.

Melt butter in a large skillet and sauté the onions until fragrant.

Add flour and whisk to combine, stirring and cooking for 2 minutes.

Gradually whisk in milk and cook until thickened over medium heat for about 2-3 minutes.

Turn off the heat and whisk in salt, pepper, and nutmeg.

Add one cup of cheddar cheese to the sauce and spread half of the cheese sauce on top of the potatoes.

Sprinkle a half cup of cheddar over the sauce.

Layer the remaining potatoes, ham, and cheese sauce.

Bake at 400 degrees until the potatoes are tender, about an hour.

Garnish the potatoes with freshly chopped chives right before serving.
