Scalloped Potatoes and Ham

6 Tablespoon butter
1/4 cup flour
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
3 cups milk
6 cups thinly sliced peeled potatoes (about 4 large russet potatoes)
2 cups cubed fully cooked ham
1 tablespoon dried minced onion

Preheat the oven to 375°F.

In a large saucepan, melt 4 tablespoons of the butter.

Once melted, add the flour and mix well until the flour is incorporated. Then add the thyme, pepper, onions, and parsley.

Cook the roux for a minute to remove the flour taste.

Slowly add the milk and bring to a boil for 2 minutes.

In a greased 8x8 baking dish (or 2 smaller baking dishes), add a little bit of the milk sauce at the bottom of the pan.

Add a layer of sliced potatoes and then ham.

Top with half of the sauce and repeat layers.

Cover the dish with foil and bake at 375°F for 65-75 minutes, until the potatoes are almost soft.

Remove from the oven, remove the foil, and add small cubes of the remaining butter.

Bake uncovered for 15-25 minutes until the potatoes are tender.
