Heat oil in a skillet over medium heat for frying.
Fry plantain slices until golden brown on both sides, about 3-4 minutes per side.
Remove fried plantains and drain on paper towels.
In a separate skillet, heat vegetable oil over medium heat until shimmering.
Add chopped onions and sauté until translucent, about 3-4 minutes.
Stir in chopped habanero, garlic, and ginger, cooking until fragrant, about 1 minute.
Add chopped tomatoes and bell pepper, cooking until softened, about 5-7 minutes.
Season with salt, white pepper, and vegetable seasoning to taste.
Add eggs to the mixture, stirring gently to combine.
Cook until eggs are just set, about 3-4 minutes, then remove from heat.
