How to Make a Sweet Azerbaijani Milk Bread

Mix cold milk, yeast, salt, sugar, whole egg, turmeric, and soft butter in a bowl; mix well to dissolve salt and sugar.
Add strong white bread flour to the mixture and mix until no dry flour remains.
Knead the dough by hand for about 5 minutes until smooth.
Place the dough in a bowl and cover; let proof for 1 hour at 25-26 degrees Celsius.
After the first proof, fold the dough to strengthen it and de-gas it; let it proof for another hour.
Flatten the dough into a disc on parchment paper and place it on a tray.
Cover and let it proof for the final time for about 1 to 1.5 hours.
Preheat the oven to 160 degrees Celsius with a fan.
Glaze the dough with a mixture of egg yolk and milk, allowing it to dry for 5 minutes before applying a second glaze.
Sprinkle poppy seeds on top and use a fork to create a checkered pattern.
Bake in the oven for 25-30 minutes until golden brown.
