Stewed Black-Eyed Peas with Plantains

2 cups of dried, black-eyed peas
2 ripe but firm plantains
1/4 cup of palm oil
smoked turkey pieces
1 large yellow onion
1 large tomato
fresh garlic cloves
2 bay leaves
1 red bell pepper
1 green jalapeño
1 or 2 small cans of tomato paste
1 teaspoon of crayfish or ground herring (optional)
2 tablespoons of Mamie Renée’s green seasoning
1 tablespoon of mixed herbs
water

Wash and peel the plantains. Cut into large chunks.

Boil the plantains in lightly salted water. Don’t overcook. Set aside.

Boil the black-eyed peas along with the smoked turkey and bay leaves. Strain and set aside.

Inside a blender, put the sliced onion, red bell pepper, fresh tomato, and garlic cloves. Blend and set aside.

In a deep pot, pour the palm oil. When hot but not smoking, add the sliced yellow onion. Cook until translucent.

Add the tomato paste thinned with a little bit of water and stir.

Add some scallions and whole hot pepper.

Add the mixed herbs/seasoning and a little bit of salt if necessary. Cook gently, stirring occasionally, partially covered until the oil comes to the top.

Add the blended mixture and stir. Cover and let simmer gently for 2 to 3 minutes.

Add the cooked beans and the smoked turkey. Add more scallions and the sliced and seeded green jalapeño pepper.

Add the Mamie Renée’s green seasoning. Cover partially and let simmer on medium to low heat to allow all the flavors to blend.

After 5 minutes, add the precooked plantain chunks. Stir gently and cover. Let simmer for a couple of minutes.

Adjust the seasoning if necessary.

Serve as is, or with rice, bread, or any side of your choice.
