Prepare the base by mixing the biscuits with melted butter and put it in the fridge.
In a bowl, combine the Mascarpone cheese, eggs, sugar, lemon zest, and lemon juice.
Pour the cheesecake filling over the prepared base and bake for 45 minutes at 190°C.
Prepare the sour cream filling by mixing sour cream, sugar, and vanilla sugar, then pour it over the cheesecake and bake for an additional 5 minutes at 250°C.
Turn off the oven, leave the cheesecake inside for 15 minutes without opening the door, then let it cool down.
For the strawberry topping, mix strawberries, sugar, and agar agar powder, bring to a boil, cool slightly, and pour over the cheesecake.
Refrigerate for about 2 hours before serving.
