Cut the head and bottom off the baigan and slice it into smaller pieces.
Soak the baigan pieces in water to prevent oxidization.
Fry the shrimp in a pan until golden brown, then set aside.
Saute onions in a pan until fragrant.
Add garlic and Jamaican pepper to the onions and mix.
Add the baigan and Edo to the pan and cover to cook for 4-5 minutes.
Add salt, black pepper, and tomato paste to the baigan and Edo mixture.
Stir in fine thyme and green onions.
Add chopped tomato and cilantro to the mixture and stir.
Combine the shrimp with the baigan and Edo mixture and cover to finish cooking.
