Fish- Stuffed Plantain Balls

3 large ripe plantains
1 cup of pastel fish stuffing
Salt
Oatmeal flour (or flour of your choice)
3 tablespoons of cornstarch
Breadcrumbs (optional)

Wash the plantains.

Peel the plantains.

Cut the plantains into chunks and boil them in lightly salted water.

When tender, remove the plantain chunks and mash them roughly in a bowl.

Add the cornstarch to the mashed plantains and combine.

Take small handfuls of the mashed plantains between floured hands and flatten gently to form each ball.

Put small amounts of the fish stuffing in the center of each flattened ball.

Shape into a ball while trapping the stuffing inside.

Dust some of the plantain balls with flour and roll the others in breadcrumbs.

Fry the balls on medium high heat.
