Chicken broth adds flavor without alcohol.

Preheat the oven to 160°C (320°F).

Season the lamb shoulder generously with salt and black pepper.

Rub minced garlic, chopped rosemary, and thyme all over the lamb.

Drizzle olive oil over the lamb and massage the herbs into the meat.

Place the lamb in a roasting pan and surround it with quartered onions and chopped carrots.

Add halved potatoes around the lamb for roasting.

Pour white wine into the bottom of the pan for moisture.

Add bay leaves and sprinkle paprika over the vegetables.

Cover the roasting pan with foil and place it in the oven.

Roast for 2.5 to 3 hours, until the lamb is tender and falling off the bone.

Remove the foil for the last 30 minutes to allow the lamb to brown.

Baste the lamb occasionally with the pan juices during cooking.

Once done, remove the lamb from the oven and let it rest for 15 minutes.

Garnish with chopped parsley before serving.
