1

Measure 880 g of plain flour and add to a large mixing bowl.

2

Add 2 tablespoons of sugar, 1 tablespoon of salt, and 1 teaspoon of baking powder; mix well.

3

Add 500 g of cold butter in small lumps and mix until the mixture resembles breadcrumbs.

4

Beat together 3 whole eggs and create a hole in the mixture to add the eggs; mix with a fork.

5

Incorporate the mixture with fingers, adding about 1/4 cup of cold water if needed.

6

Sprinkle a handful of plain flour over the dough and work it in without over-kneading.

7

Cover the dough with clean film and refrigerate for at least 30 minutes.

8

Peel and cut 1 large potato into small cubes and set aside.

9

Heat a small amount of oil in a pan and add 1 chopped onion; fry until translucent, about 3 minutes.

10

Add 2 chopped Scotch bonnet peppers and fry for a further 2 minutes.

11

Add 500 g of lean beef mince and fry until browned, about 3 minutes, breaking it apart.

12

Season the beef with snor stock cubes, all-purpose seasoning, black pepper, and thyme; stir well and fry for another 2 minutes.

13

Add the chopped potatoes and stir to coat them with the beef mixture.

14

Add enough hot water to slightly cover the mixture and simmer for 4 minutes.

15

Add 2 tablespoons of plain flour to thicken the sauce and cook for 3 minutes to remove the floury taste.

16

Cut the pastry dough into equal portions for the number of pies you wish to make.

17

Preheat the oven to 175°C.

18

Roll out one portion of dough to desired thickness and cut out a circle shape.

19

Place a spoonful of filling in the center of the pastry, fold over, and seal the edges with a fork.

20

Place the pies on a baking tray, prick holes in them to let out steam, and brush with beaten egg for glaze.

21

Bake in the preheated oven for 35-40 minutes until golden brown.
