Prepare an herb and chili mixture by mixing lemon zest, lemon juice, chopped parsley, grated garlic, and minced jalapeños.
Cut 2 pita breads into pieces and brush with olive oil, then sprinkle with cumin and sumac.
Toast the pita pieces in a 400-degree oven for 8 to 9 minutes, flipping halfway through.
Make homemade hummus using 2 cups of chickpeas, tahini, lemon juice, and salt, processing until almost smooth.
Add reserved chickpea liquid and half of the herb and chili mixture to the hummus, processing until smooth and loose in texture.
Toast slivered almonds in ghee on the stovetop until golden brown, adding cumin at the end.
Fold whole chickpeas and toasted pita pieces into the hummus mixture, mixing well.
Top with toasted almonds, remaining herb and chili mixture, and a sprinkle of sumac.
