Preheat the oven to 400°F (200°C).
Cut parchment paper into large heart shapes, about 15 inches long.
Place a salmon fillet on one half of each parchment heart.
Thinly slice zucchini, carrots, and bell peppers; arrange on top of the salmon.
Squeeze lemon juice over the fish and vegetables.
Add minced garlic and chopped onion on top.
Sprinkle with fresh herbs, salt, and black pepper.
Drizzle olive oil over the ingredients.
Fold the parchment over to close the heart, crimping edges tightly to seal.
Place the parchment packets on a baking sheet.
Bake in the preheated oven for 15-20 minutes, until the salmon is cooked through and flakes easily.
Carefully open the packets, allowing steam to escape.
Serve immediately, garnished with additional herbs if desired.
