Coconut oil is dairy-free and adds a unique flavor.
In a bowl, mix 1 cup of granulated sugar-free white substitute and 0.5 cup of granulated sugar-free brown sugar substitute to make 1.5 cups of sugar mixture.
Reserve half of the sugar mixture for later use.
To the remaining sugar mixture, add 0.25 cup of water and 1 teaspoon of vanilla extract.
Heat the mixture until it starts to simmer and the sugar is completely melted, creating a glaze.
Add 3 cups of pecans to the glaze and stir for about 2-3 minutes to coat the pecans evenly.
Remove from heat and allow the pecans to cool slightly.
In a separate bowl, mix the reserved sugar mixture with 1 tablespoon of cinnamon.
Once the pecans have cooled a bit, transfer them back into the bowl and toss with the cinnamon-sugar mixture.
Spread the coated pecans onto a pan to separate them and allow them to harden.
