½ tsp Mustard
¼ cup 100% Pure Maple Syrup
½ tsp Brown Sugar
½ cup Ketchup
Pinch Pepper
¼ lb Bacon, cut into ½” – 1” pieces

Rinse beans with cold water and soak overnight in the fridge.

Drain the beans and place them in a large pot with 5 cups of water. Cover and heat to boiling, then simmer for 30 – 75 minutes until tender.

Once tender, drain the beans.

Slice onion and place it on the bottom of an oven-proof casserole dish or slow cooker.

In a large bowl, mix salt, vinegar, mustard, maple syrup, ketchup, and pepper. Add the beans and combine.

Pour the mixture into the casserole dish or slow cooker over the sliced onions.

Add enough water to just cover the top of the bean mixture (about 1/4 cup).

Add slices of uncooked bacon on top.

Cover and bake in the oven at 250°F for 7 hours or on low in the slow cooker.
