1

Prepare the green seasoning by washing and chopping herbs: parsley, cilantro, scallion, and pimento peppers.

2

Place the chopped herbs in a food processor with 1 cup of peeled garlic and a couple of pimento peppers, then blend and store in a mason jar.

3

In a blender, combine 1 cup of mayo, 1 tablespoon of ground bandana, 1 heaping tablespoon of garlic, 3 pimento peppers, 1 hot pepper, salt, pepper, 1 tablespoon of sugar, and 1/4 cup of vinegar. Blend until smooth and adjust seasoning to taste.

4

In an electric mixer bowl, combine 4 cups of flour, 2 teaspoons of Himalayan salt, 4 teaspoons of brown sugar, 4 teaspoons of baking powder, and 1/4 teaspoon of yeast.

5

Gradually add lukewarm water (about 1.5 to 2 cups) until there is no more dry flour, then add 2 tablespoons of room temperature butter and knead for about 5 minutes.

6

Coat the dough with about 1 tablespoon of vegetable oil, cover, and let it rest for a minimum of 20 minutes.

7

Prepare the shark fillets by washing them with lime juice and seasoning with 1/2 teaspoon black pepper and 1 teaspoon salt, along with the green seasoning mixture.

8

Slice the shark into small pieces and set aside.

9

For the fried bake, divide the dough into about 9 portions and flatten each into a disc.

10

Fry the dough discs in hot vegetable oil until golden brown, about 2-3 minutes per side.

11

Prepare toppings: slice cabbage, tomato, and cucumber using a mandolin slicer.

12

Make a mango chutney by pureeing the flesh of one semi ripe mango with 1 tablespoon of ground bandana, minced garlic, salt, and hot pepper to taste.

13

Assemble the sandwich by placing the fried shark in the fried bake and topping with cabbage, tomato, cucumber, and the garlic sauce.
