Ruffino's : How to Make Balsamic Strawberries

Pour 25 year aged balsamic vinegar into a bowl.

Add super fine granulated cane sugar to the vinegar and whisk until dissolved.

Cut fresh Louisiana strawberries and add them to the vinegar mixture.

Stir the strawberries into the vinegar and sugar mixture.

Let the strawberries marinate for about 15 to 20 minutes.

Prepare the sweetened Mascarpone by adding it to a bowl.

Add powdered sugar to the Mascarpone and mix until well incorporated.

Optionally, let the Mascarpone sit at room temperature for easier mixing.

Take a lady finger and crumble it up to absorb some of the vinegar.

Add marinated strawberries to the crumbled lady finger.

Dollop sweetened Mascarpone on top of the strawberries.

Garnish with a fresh mint leaf and place another lady finger on the side.
