Soak 1 cup of sago in 3 cups of cold water for 2 hours until the kernels open.

Soak a little saffron in 1/4 cup of rose water and set aside.

Caramelize sugar over low heat without stirring, shaking the pot gently instead.

Once the sugar is completely caramelized, remove it from the heat and carefully add boiling water gradually to it.

Return the pot to the heat and stir until the sugar dissolves again.

Add the filtered sago to the sugar mixture and stir well.

Add 1 tablespoon of high-quality ghee, reduce the heat, cover the pot, and leave for 1 hour, stirring occasionally.

After 15 minutes, add the soft cardamom and the soaked saffron, stirring every few minutes.

Cooking takes from 1 hour to 1.5 hours, and the mixture is ready when the sago cakes are gone and completely melted, becoming rubbery.

In the last 15 minutes of cooking, add any nuts you like and 2 tablespoons of ghee, continuing to stir.

The mixture is done when it separates from the edges of the pot.
