Add pisco to the shaker.
Add 1 ml of fresh lime juice.
Add sugar to the shaker.
Add 1 ml of egg white.
Dry shake the mixture without ice.
Add ice cubes to the shaker.
Shake again to chill the mixture.
Double strain the mixture into a glass.
Garnish with lemon zest and lemon essence.
