0.5 ounces lime juice
0.5 ounces lemon juice
0.75 ounces semi-rich simple syrup
0.75 ounces aquafaba
1 drop Angostura Aromatic Bitters

Chill a glass in the freezer.

Measure and pour 2 ounces of Pisco into a shaker.

Add 0.5 ounces of lime juice and 0.5 ounces of lemon juice to the shaker.

Add 0.75 ounces of semi-rich simple syrup to the shaker.

Add 0.75 ounces of aquafaba to the shaker.

Dry shake the mixture vigorously for 10 seconds to emulsify the aquafaba.

Add ice to the shaker and shake again until cold.

Grab the chilled glass and double strain the cocktail into it.

Let the foam settle for a minute.

Garnish with 1 drop of Angostura Aromatic Bitters on top.
